There is no need to worry about eating out in Trujillo as excellent local and international cuisine can be found in the stately streets of its historical center and in its outskirts, all with that particular "norteño" flavor which makes every dish so unique.
When visiting the "Ciudad de la Eterna Primavera" (City of Eternal Springtime), as it is also known, a "must" is the "Shambar", a traditional dish prepared specifically on Mondays, combining "mote" (boiled grains of corn), beans, wheat, pork, "cancha", coriander, red pepper and onions. A real flavor explosion, which surprises the palate!
