Local cuisine is prepared mostly with pork and vegetables, however a wider culinary variety is available in Ayacucho city. You should definitely try "puca picante", a stew prepared with potatoes, beetroot and peanuts seasoned with different condiments; "qapchi" prepared with potatoes, cheese and chili; "patache" prepared with wheat and bacon; and "Lanka" prepared with beef, pork or lamb.
"Chaplas" a local bread is delicious with "sauco", or elderberry, a typical fruit of the region, or Andean cheese.
Try "Chicha de Jora" a refreshing fermented corn drink, or a cup of "Mate de Coca" a herb tea made from coca leaves and ideal for helping you to get used to the altitude of the city.
